@algoatall I mostly fill myself up on projects so I can keep busy because I'm pretty bad at coming up with scenes on the spot.
But if I am forced to come up with something (e.g. for a daily draw) I'll usually revert to drawing one of my OCs or think of a random bg pony, usually just posing cutely or in the bababa animated style.
Posing / scenario can be a whole other can of worms but often choosing a character first leads into me thinking about scenarios I might like to see them in.

@algoatall it entirely depends on the degree of realism the artist is going for.
if it's fairly cartoony it's fine and can even be preferred to help get across an expression, or sometimes being able to see both eyes can be cuter because big poni eyes.
If it's a more realistic style then you probably shouldn't see it.
I vary from piece to piece based on how far I am taking the rendering.
How much of the eye is covered effects things too, if it's barely covered it's usually fine to show the eye.
